Immune Boosting Hash Browns

If you're a hash brown fanatic, make them good for you with immune boosting herbs and spices!

  • 5 Medium-sized potatoes, grated
  • 2 Eggs, fresh
  • 3 cloves Garlic, minced
  • 1 Small onion, finely chopped
  • 1/8 tsp Turmeric or more to taste
  • Sea salt and fresh ground pepper to taste


  1. Grate the potatoes into a colander so the water and starch can drain out; you can put a plate as a weight on top of the potatoes to speed up the process.
  2. Transfer the potatoes to a mixing bowl and mix them and the rest of the ingredients with a large spoon.
  3. Meanwhile, heat a nice chunk of coconut oil or a generous amount of olive oil in your best frying pan.
  4. When the oil is hot, put a large dollop of the potato mix and smoosh it flat.
  5. Fry the hash browns about five minutes on each side until the potatoes are soft, opaque and browned on each side.
  6. Serve immediately with homemade ketchup or barbecue sauce.

Recipe Notes

You can also toss in immune boosting culinary herbs like basil and rosemary - call them bugs and your kids will think their hash browns are even cooler and ask for more.


I hate grating things so I usually use the grating attachment on my Kitchen Aid for both the potatoes and the onions. Worth the clean up to me!
