Homemade fruit leather is a great way to preserve the fruit harvest from summer through fall so there’s no waste. Fruit leather, which is dehydrated fruit puree, also makes a great snack for lunches and after school. Choose your favorite fruit and sweetener! There’s no need to buy fruit leather when it’s easy to make your own with or without a dehydrator. This post has been updated from 2014 to provide a printable recipe and more robust instructions. Why Make Homemade Fruit Leather?
Homemade fruit leather is delicious, of course! Because leathers are made from fruit puree, they contain all the original fiber, minerals, antioxidants, and vitamins as the original fruit.
A big favorite of younger children, it also makes a tasty teen snack when slathered with cream cheese and rolled up like an hors d’oeuvre. Homemade fruit leather is an amazingly easy, wonderfully delicious, and healthy snack to make yourself.
An added bonus is that fruit leather is so simple to make, the teens can do it themselves! All you need is:
- fruit
- a blender
- a dehydrator
If you don’t have a dehydrator, don’t worry! You can use your oven on its lowest setting, or even a solar oven with its lid vented to dehydrate your fruit leather.
If you live in a hot/dry climate, you can also use spread your homemade fruit leather on a piece of clean window screen to dry in the sun. Cover it with a sheet to keep the bugs off the leather.
Make Small Batches For a Seasonal Snack
As you shop for fruit at the farmer’s market, buy a little extra throughout the summer and fall each time you go. Make fruit leather once a week in small batches to build up your stores.
Better yet, if you’re growing your own fruit, you harvest a little extra any day you have a few minutes to make fruit leather.

If you don’t have fruit ripe where you live yet and you see a sale on canned fruit, you can generally follow these instructions for using that instead.
- You’ll most likely use less, if any, sweetener when using canned fruit, FYI.
Fruits That Can Be Made Into Homemade Fruit Leather
Basically any fruit can be turned into fruit leather. Some fruits require more effort to either skin or seed, and some aren’t as tasty as others.
Easy to Process Fruits for Fruit Leather:
- Strawberries – we toss the whole berry, including the green tops, into the blender after a simple wash.
- Other berries like blueberry, raspberry, blackberry, and gooseberry.
- Bananas – peel and blend them.
- Grapes removed from their stems.
Fruit that Requires a Little More Prep:
- Pomme fruits like apples and pears – these need to be seeded. You can also skin them, but I never do because I like the added vitamins that can be found in the skins.
- Mangoes and Papaya – both have seeds that must be removed before blending.
- Plums and other pitted fruits – same as above; you must remove the pits before blending.
Some fruits simply aren’t that palatable on their own in fruit leather.
- For example, persimmons are very astringent, despite their delicious flavor. Mix these fruits with more mild ones like apples or bananas.
Don’t Forget to Add Kids
This is a really good kitchen activity for children and grandchildren, FYI. Young children will need supervision around knives, blenders and ovens, of course.
However, none of the tasks involved in making fruit leather are too complicated for children.
Learning to:
- follow instruction
- chop fruit
- pour out puree
- and monitor the progress of the fruit leather as it dehydrates
are all good skills for children to learn.
As you’re working together in the kitchen, you can also pass on a little bit of why you’re bothering to make your own fruit leather. You can talk about food preservation and the importance of eating healthy foods, especially snack foods.
What started out a chore can turn into a teaching moment.
Steps to Make Fruit Leather
Don’t let the number of steps in this tutorial scare you off making your fruit leather! The process is not complicated at all.
Prepare the Fruit
Here’s how to make your own fruit leather in a few easy steps:
- Rinse your chosen fruit to remove dust and debris. I’m using apricots in these pictures, but you can make fruit leather out of just about any fruit.
- Cut out and compost seeds, stems, and cores. Chop the fruit and place it into your blender body.
Soft fruits like apricots just need to be pitted and thrown directly into a blender or food processor to become puree consistency.
Harder fruits may require 1/4 cup of water or fruit juice added to the blender body. You may also pre-soften these fruits by simmering them in a small amount of water on the stove for ten minutes.
(That’s too much work for me, so I usually simply add water or fruit juice).
Do I Need to Add Sugar to Homemade Fruit Leather?
- Taste your puree. Does it need sweetener?
You can use any sugar including raw honey and erythritol, but taste test both because they’re very sweet. You can use a raw sugar like succanat, too.
- If you use any granulated sugar, add it to taste to the blender body and blend until the sugar is dissolved.
Also, If you’d like to prevent possible browning or discoloration of your fruit, add one tablespoon of lemon juice concentrate for every cup of fruit. I never bother with this, FYI.
How Much Fruit Puree Do I Need for Homemade Fruit Leather?
How much fruit to blend depends entirely on how much leather you want to make. Four cups of fruit approximately becomes two cup of fruit puree which will be enough for one dehydrator sheet.
Be sure to completely blend it down. If you have chunks of fruit leftover, they won’t dry at the same rate as the rest of your fruit leather and may lead to mold.
Prepare to Dehydrate the Puree
The first step is to decide how you will dehydrate your fruit puree – whether in a dehydrator, electric or solar oven. The only tricky step after that is to evenly pour out the fruit puree. Instructions follow below.
- Line a dehydrator tray* with a dehydrator sheet or silicone mat and pour the puree evenly onto it. Use a spatula of some kind to spread the fruit puree evenly over the tray.
- Be sure there aren’t any holes in your spread. Likewise, check that there aren’t any large clumps of puree. Even drying is the key to quality fruit leather that will last without molding.
- If you don’t have a dehydrator, use a rimmed baking sheet (like a jelly roll pan) and line it with parchment paper to place in the oven.
- When using your solar oven, double check that your baking sheet will fit inside of it before you pour out your the puree. If the baking sheet is too large, you can use any pan that will fit. A baking sheet just allows you to dehydrate a lot of fruit leather at once.
- For best results, keep the thickness around 1/4 inch. The thinner the spread, the faster it will dry.
Dehydrating the Puree Via Sun & Air
If you live in a hot, dry climate you can put the dehydrator sheet right onto any surface that allows easy circulation. We had an old door screen that we washed well and used for this when I lived in the western U.S. (My current climate doesn’t allow for outdoor drying because of the humidity level.)
When drying outside, you need to cover the fruit with a light sheet to keep the bugs off. When drying puree, you must elevate the sheet just a bit to prevent it from sticking.
- I used wire baker’s racks for this, but you could use glass jars at the corners and center, or anything else heavy enough not to tip over and still keep the sheet up off the fruit.
Fruit Leather in a Dehydrator
Place your prepared trays into the dehydrator carefully so you don’t spill.
- Set the dehydrator around 135 F/ 57 C.
Finish time for fruit leather dries in a dehydrator is dependent on A LOT of factors like ambient humidity and to what temp you set your dehydrator.
- I like my fruit leather to stay pretty pliable, so I start checking on it from 4-6 hours. With my humid summer, my fruit leather might need 8 hours to fully dry.
Dry Fruit Leather in an Electric Oven
Here’s a great tutorial from Two Peas and their Pod for using your oven instead of a dehydrator.
Most ovens only go down to about 170 F/76 C, so keep your eye on your fruit leather to keep it from over-drying.
- Best rule of thumb is to check it every hour. Set a timer, if you need to.
Full disclosure, I’m too scatter-brained for this method and always burn it. That’s why I finally bought a dehydrator.
Fruit Leather in a Solar Oven
In a solar oven, with the lid vented to allow moisture to escape, check the leather every few hours. To learn more about dehydrating fruit in a solar oven, click here.
Fruit leather dries from the outside towards the center so just make sure that your finger doesn’t leave an imprint when you press it into the center.
Finish Processing the Fruit Leather
- Fruit leather dries from the outside in, so concentrate on the center area. Check that the fruit leather is dehydrated enough; it should feel dry to the touch. Your finger should not be able to leave an indentation in the surface.
- Stickiness isn’t always a good gauge because fruit sugar is naturally sticky, but if you’re concerned your leather is still too sticky, dehydrate it a bit more.
- Remove the fruit leather from the liner and allow it to cool. It should come off the liner easily; if it sticks or is still mushy, you know it needs more dehydrating time.
- Cut the fruit leather into bite size pieces, strips, or do the classic fruit roll-up thing. Store in plastic or glass.
- You can also put wax paper or butcher paper in between your rolls of homemade leather to ensure they don’t stick to each other.
- According to the National Center for Home Food Safety, you can plan to store your leather for one month at room temperature and about a year if tightly wrapped and placed in the freezer.
Homemade Fruit Leather How-To
Use these adaptable directions to make up small batches of homemade fruit leather. You can customize the directions to use your favorite fruit, sugar, and dehydration process (in case you don’t have a dehydrator).
Homemade Fruit Leather
Equipment
- 1 Blender
- 1 Rubber spatula
- Dehydrator Trays or jelly roll pans for the oven
Ingredients
- 4 Cups Fruit - Seeded, Peeled, Chopped
- 1/2 Cup Raw Sugar
- 1 Tbsp. Lemon Juice, Optional
- 1/4 Cup Water or Fruit Juice, as Needed
Instructions
- Add the 4 cups of fruit, 1/2 cup of sugar, and 1 tablespoon of lemon juice (if using) to a blender body and blend until completely smooth. If the blender is struggling, add some water until it blends easily.
- Line a dehydrator tray with a dehydrator sheet or silicone mat and pour the puree evenly onto it. Use a spatula to spread puree evenly over the tray. Be sure there aren't any holes or clumps in the spread. Even drying is the key to quality fruit leather that will last without molding.
- Stack filled trays in the dehydrator and turn it on. Set the dehydrator to 135 F/57 C.
- Start checking the fruit leather for doneness** at the 4 hour mark. It may take up to 6 hours; possibly 8 hours, if you're environment is humid.
- Remove the fruit leather from the liner and allow it to cool. It should come off the liner easily; if it sticks or is still mushy, you know it needs more dehydrating time.
- Cut the fruit leather into bite size pieces, strips or dothe classic fruit roll-up thing. Store in plastic or glass one month at room temperature and about a year if tightly wrapped and placed in the freezer.
- You can also put wax paper or butcher paper in between yourrolls of homemade leather to ensure they don't stick to each other.
Notes
- A baking sheet just allows you to dehydrate a lot of fruit leather at once.

Yep, pretty much any fruit will work. If you’re doing apples, I suggest cooking them down a bit first; maybe make applesauce first and then make leather. I want to have a big enough strawberry harvest to do strawberries but so far my strawberries are less than stellar producers. It might have something to do with the benign neglect I employ in their care.

Some years that apples do really well in the valley and we have homemade apple sauce to make apple leather. But some years its the pears that shine and we have pear sauce. The pears are great because they’re so wet you don’t have to cook them to make sauce – just throw them in the blender after you core them and you’re done.

Alaska! You are brave! With frozen, you’d want to defrost and then drain off any extra fluid before you blended the fruit. You can save the fruit water for juice, etc but it will save dehydrating time if you get it out of the fruit before you try drying it.
