We like to think of Valentine’s Day as a family holiday at our house. We will make heart-shaped, sourdough pizzas and play some games. We’ll always have a treat, of course!
These strawberry keto no bake cookies are great for this holiday because they’re so easy even the youngest children can help mix and mold them. It’s super fun to pop them out of their molds and place them on delicate dishes with frilly patterns.
Even more fun to eat them! I can have confidence that we won’t have upset tummies because, while these no bake cookies are delicious, they aren’t full of sugar.
Ingredients for the Keto No Bake Cookies
The recipe for these strawberry keto no bake cookies calls for allulose, which is a granulated low-carb sugar.
- However, if you’re not 100% keto, you can make these cookies with organic granulated sugar.
There are three coconut products in this recipe:
- Coconut Oil
- Coconut Butter
- Flaked Coconut (unsweetened)
The last ingredient is powdered strawberry. I use either dehydrated or freeze dried strawberries that I preserve during the spring. Strawberries are a fleeting crop, so I have to move fast to get all the strawberries we’re going to want during the year.
You can purchase both dehydrated and freeze dried strawberries in some grocery stores, as well as health food grocers online.

There are myriad other foods to dehdyrate and foods to freeze dry that you can learn to process at home. They can all be powdered to include into recipes for breads, pastas, pastries, and desserts.

Valentine’s Strawberry Keto No Bake Cookies
These strawberry keto no-bake cookies are great for family dinners, school parties, and a delicious treat for that special someone.
Valentine's Strawberry Keto No Bake Cookies
Ingredients
- 3 Tbsp. Coconut Oil
- 2/3 Cup Coconut Butter
- 3 Tbsp. Allulose or Erythritol Or 4-6 Drops Stevia
- 1/2 Cup Powdered Strawberries
- 1 Cup Shredded Coconut, Unsweetened
Instructions
- Using a double boiler over medium heat, melt 3 Tbsp. of coconut oil, with 2/3 cups of coconut butter, 3 Tbsp. allulose, and 1/2 cup of powdered strawberries. Mix these ingredients as the coconut oil and butter melt.
- Once the coconut oil and butter are melted, remove the double boiler from the heat. Stir in 1 cup of shredded coconut slowly and methodically until everything is incoporated.
- Once everything is mixed evenly, spoon the no bake cookie batter into heart-shaped molds. Or use a tablespoon to create rounded cookie shapes and place them on a cookie sheet lined with parchment paper.
- Either way, press the cookie batter into the mold very firmly. Remove extra bits of dough from the sides of the tablespoon or from the top of the mold. Freeze for 10-20 minutes.
- Once firm, carefully remove the cookies from the molds. Keep the cookies in an airtight container in the fridge for up to a week. (If you don't eat them all before then.)
Notes
- Change the coconut oil to butter.
- Switch the coconut butter to peanut butter.
- Change the powdered strawberry to cocoa and reduce to 1/2 cup.
- You may also use powdered raspberry or cranberry if you don't have strawberry. This will keep the natural dye from the fruit for a Valentine's Day colored treat.
Strawberry Keto No Bake Cookies
You can place all the ingredients into the double boiler except the shredded coconut. They will mix together well as the coconut oil and butter melts.
If you don’t have a double boiler, simply use two pots nested together.
- Fill the bottom pot half full of water and place the empty pot on top.
- Put your ingredients into the top pot and turn the heat on underneath the bottom.
Once the coconut oil and butter begin to melt, start slowly mixing the ingredients. The color of the strawberries will help you know how well you’ve mixed as you watch the red color evenly distribute.
Once everything is mixed, press the cookie batter into the mold or a round tablespoon very firmly. Turn out any cookies molded by the tablespoon onto a parchment paper lined cookie sheet.
Remove extra bits of dough from the sides of the tablespoon or from the top of the mold. Place in the freezer for 10-20 minutes or until firm. Carefully remove the cookies from the molds.
If you have jagged edges left on the keto no bake cookies (probably from coconut oil or coconut itself), simply pop them off carefully. Smooth them with the warmth of your thumb, running it over the edge.
You may serve the cookies face up (the shaggy coconut side) or face down (the smooth side).
Keep the cookies in an airtight container in the fridge for up to a week. (If you don’t eat them all before then.)
Change Up These Keto No Bake Cookies
To change up this recipe, you may:
- Change the coconut oil to butter.
- Switch the coconut butter to peanut butter.
- Change the powdered strawberry to cocoa and reduce to 1/2 cup.
This will give you a no bake cookie similar to the original version.
- You may also use powdered raspberry or cranberry if you don’t have strawberry. This will keep the natural dye from the fruit for a Valentine’s Day colored treat.
